My Husband’s Favorite Sweet Potato Pie Recipe

When the holidays are coming around one of my husband’s favorite desserts I make is sweet potato pie. I have to agree that it tastes better than pumpkin pie. Pumpkin pie just has a different texture and taste than sweet potato pie does. It tastes great warm or cold. Of course you have to add a dollop of cool whip on top. I make this dessert for both Thanksgiving and Christmas time. It is a hit in our family.

I had never had sweet potato pie until I met my husband. I grew up eating pecan pie with vanilla ice cream, radar pie (chocolate pie), or pumpkin pie. Now my favorite pie to eat is sweet potato pie. My recipe is super easy to make too. If I can make it anyone can make it.

Sweet potatoes are healthy too! Not necessarily in this recipe since it is mixed with sugar, but sweet potatoes used in other recipes or by themselves are healthy. A few of their benefits are: Assortment of vitamins and minerals, beta-carotene, they are high in fibre and antioxidants (which are great for gut health).

My recipe makes TWO pies! I get the frozen, uncooked pie shells from my local grocery store and they are the thin crust (not the deep dish). If you want to do a deep dish pie, this recipe may make one pie.

Items Needed:

  • 4-5 medium size, cooked sweet potatoes (usually between 2-3 cups)
  • 2 uncooked pie shells (you can make your own pie shells if you’d like)
  • 6 oz. of soft butter (cold, hard butter doesn’t mix well)
  • 2 large eggs
  • 2 C. of sugar
  • 5 oz. of evaporated milk (usually use half of the small can from the store)
  • 2 tsp of vanilla extract
  • 2 tsp of ground cinnamon
  • 1/2 tsp nutmeg

Directions

  1. Wash sweet potatoes. Puncture fork all around the sweet potatoes. Wrap them in paper towels and place in microwave. Hit potato button. You can cook them in the oven if you’d like (just takes a lot more time). Cook them for 45 mins to 1hr at 400 degrees.
  2. Place cooked sweet potatoes, soften butter, eggs, sugar, evaporated milk, sugar, vanilla, ground cinnamon, and nutmeg into my Ninja ( https://amzn.to/2LSsBqn ) Blend until thicken.
  3. Place mixture into cooked pie shells (follow directions on pie shells).
  4. Place sweet potato pies into oven at 350 degrees and cook for about 1hr or until pie is firm. I always poke the middle of the pie with a knife and as long as the knife comes out clean the pie is done.
  5. Let pie cool before serving
