Guacamole is one of my kids favorite side dishes I make when I make tacos for dinner. It is one of the sides that doesn’t get put into a leftover container at the end of the meal. It is also healthy which is a plus. The kids don’t realize that there are vegetables in it. My oldest doesn’t like to eat vegetables and she doesn’t think twice about eating my homemade guacamole.
Are Avocados Healthy?
You might be wondering are avocados healthy. Avocados are actually very healthy for you and they are considered a fruit. They are high in healthy fats. They contain many vitamins, folate, fiber, and also potassium. You can get more potassium from an avocado than a banana. When I was pregnant with all of my kids one of the things I enjoyed eating was french bread with avocado on it. There are also studies that shows that eating avocados can help you lower cholesterol. So it doesn’t hurt to incorporate it into one of your daily meals.
Guacamole Recipe
- 6-7 medium size avocados
- 1 bundle of cilantro (make sure to wash before use)
- 1 large jalapeno (you can add more to make it spicier)
- 1 small red onion
- 1 medium red bell pepper (make sure to wash before use)
- 1 lime
- salt
- garlic powder
It is really easy to make this recipe. It usually only takes me about 5 minutes to prepare. First, I slice the avocados in half, throw the pit away, and scoop the avocados out of the skin with a spoon. Second, I put it all in a bowl and smash the avocado with a fork. Next, I will dice up the onion, red bell pepper, jalapeno, and cilantro.
Then, place it all in the bowl with the the smashed avocado and mix it all together until its well mixed. Next, I will cut the lime in half and squeeze the lime juice into the bowl (Only add as much as your pallet will like). Finally, add 1 tsp of salt and garlic powder. After that I would just keep adding a little more of salt and garlic powder to your tasting. I believe the more salt and lime juice that you add brings out the flavors. Mix it all together and serve!
